Instructions
  1. Preheat over to 150. Line a baking tray with baking paper.
  2. Melt butter
  3. Put the rolled oats, almonds, macadamias, walnuts, chia seeds, mango and paw paw and ground ginger into a large bowl
  4. Add the wet ingredients to the melted butter. Combine the wet and dry ingredients and mix together
  5. Spread granola mix onto the prepared baking tray and place in the oven for 30 minutes. After 30 minutes stir granola so everything gets toasted and leave in the oven for 15 minutes or until all of the granola is golden brown and toasted.
  6. Add goji berries and coconut and leave to cool. Store in an air tight container.
  7. Serving suggestion – Delicious with some Greek or natural unsweetened yogurt and fresh berries. 
Recipe Notes

Pumpkins seeds (pepitas) would be a great substitute for any of the nuts. I would’ve liked to have used them but they didn’t have any in stock at the time.

Ginger syrup is available from most supermarkets, if not try you local organic food store. I use The Ginger People ginger syrup. How cute is the bottle?

This granola doesn’t have many clumps but is still some great tasting toasted goodness
